You will switch to survival soon enough. If you want to get a feel for the game first, do some building, meet some enemies, start on normal. When the game gets too easy, sooner rather than later, switch to very hard. Then you will realise you might as well go for survival.

They're very different, so it depends on what you like. Very hard is the normal game, but your guns don't do damage, while the enemy damage gets massively boosted. Other than that it's just like playing normally. Survival on the other hand tweaks things massively, so the game feels very different to play. Survival mode is WAY too difficult. Surviving in this game is practically impossible, and I think its mainly due to the damage balance between the player and enemies. My character will usually die in one or two hits, while raiders, I swear to god, can take 3 shots from a shotgun to the face.
